Hot Cross Bun Recipe

I awoke early yesterday morning to make my dear husband one of his favourite things. Hot Cross Buns!! OK, OK I know it's not Easter, but I really couldn't resist making them. The ohhs and ahhs are totally worth it. Of course I left off the crosses.

It is one of the best recipes I have made and is now a lot easier now I have a bread machine. If you don't have one you can still make this recipe, you'll just use more elbow grease!

Hot Cross Buns
550g/1lb3oz Strong White Bread Flour
1/2tsp salt
50g/2oz Butter, cut into pieces
7g/2tsp yeast
2tsp ground mixed spice/apple pie spice
50g/2oz golden caster sugar
275g/9fl oz warm milk
2 eggs, beaten
200g/8oz mixed dried fruit or 4oz each of golden raisins and raisins
1 lemon zest, grated
1 lemon zest & 1 orange zest, pealed
1tbsp white sugar


1. Warm milk in microwave for about 1 minute. Add beaten egg and pour into bread machine.Add cut butter, sugar and salt.

2. Add flour and in the center make a little well/hole to place the yeast in. (make sure the yeast does not touch the liquid. Add mixed spice or apple pie spice, if in America and 1 lemon zest, grated.

3. Set the bread machine on to dough setting.

4. Whilst the dough is kneading peel the zest of 1 lemon and 1 orange and chop finely.

5. Place in a pan with 1tbsp of sugar and a small amount of water (about 2tbsp) Bring to a boil and take off the heat adding the mixed fruit

6. If your bread machine beeps when it's time to add additional ingredients then go ahead and add the mixed fruit with citrus peel. Mine does not have the added beep, but around 58 minutes left then I add my additional ingredients, giving the machine about 6 minutes to mix before allowing the dough to rest and rise for the rest of the time.

7. Once the dough is risen, my machine takes a total of 1hr 20mins, grease a baking tray with oil and make bun/cob shapes. Cover with a tea towel and let them rise in a warm place for an additional 30mins or until doubled in size.

8. Once doubled in size, place into a preheated over at 200C/400F for 10-15minutes

9. Whilst still warm, cut and butter and enjoy with an wonderful cup of tea!
