Leap On Over For A Cake Pop!

H A P P Y   L E A P   Y E A R   D A Y !


Since this day only comes round every four years I just had to leave a post.  I did nothing special for the actual day as I am in the middle of making a baby shower cake for this coming Saturday.  Actually it's lots of cupcakes and one small cake with a pregnant lady made from sugar sat on top.  Right now she's headless!!

Anyway onto cake pops.  These were very simple to make, but I have a lot to learn about them as I'm just not good when it comes to coating them with the chocolate (which is really the main part).  They tasted great and I guess that's the most important thing when it comes to little things like these.

Another month is almost over and Spring is coming for most of you, for me it's jumped straight passed Spring and is Summer!!  We're in the high 80's here and it makes me realize how much I miss seasons.

Pancake Cake


In honor of pancake day I made a pancake cake!!

I've been dying to make it and totally enjoyed every minute of it.  Underneath is a chocolate cake with ganache filling. Very yummy.

She did a tutorial on it and it was so cool that I knew I just had to make it.  I actually saw it a few years ago and was simply in awe of it.  I just couldn't get my head around how she did it, but now I know!!  

I am going to make another one soon and attempt a different flavour cake.  One that I've never made before, simply because it's fun to experiment.

Oreo Cheesecake Recipe

I am a big fan of cheesecake!  I just love it but alas my husband can not eat it and my children are not to fond of it (although having said that they are beginning to like it a bit more) therefore I never get to make it too often because if I do I seriously will eat the whole thing!  I only make it for company and once I made it for Teacher Appreciation Week when my son was in Kindergarten and it was a huge hit, so now it's a yearly request.

I thought I would share one of my favourite recipes with you. It's actually a British recipe, but yet uses Oreos which is something that is hard to come by in England and very expensive.  The recipe does say that you can use chocolate bourbon biscuits in replace of the Oreos.  I've never made it with these and to be honest I don't think it would be as good.


Oreo Cheesecake

Base:
350g (12oz) Oreo Cookies
100g (4oz) 1 stick butter, melted
Filling:
800g (13/4lb) Cream Cheese (I use 3 8oz packs)
4 eggs, beaten
175g (6oz) Sugar
200ml (7floz) Heavy whipping cream
350g (12oz) Oreo Cookies, crushed into crumbs using a food processor
400g (14oz) Sour Cream
2tbsp Sugar
Topping:
4 tablespoons sour cream
chocolate curls

  1. To make the base, mix the crushed cookies with the melted butter.  Press firmly into a 10" diameter spring-form cake tin
  2. To make the filling, beat together the cream cheese with the eggs and caster sugar until smooth.  Stir in the cream and pour half of this filling over the base.  Top with the broken cookies and press into the filling.  Cover with the remaining cream cheese mixture.
  3. Place on a baking sheet, and bake in a  preheated oven 190C/375F for 25 mins or until the cheesecake is fairly set around the edges of the tin.
  4. Remove from the oven and increase the oven temperature to 240C/475F 
  5. Mix the sour cream with the 2 tbsp of sugar and spread over the top of the cheesecake. When the oven reaches the new temperature, return to the oven and bake for exactly 5 mins.  Remove from the oven and allow to cool thoroughly.
  6. For the topping, spread the remaining sour cream over the cheesecake and sprinkle with the chocolate curls.
Tip: bring the cream cheese to room temperature before using and blend in your mixer before adding the sugar and eggs. 
I also only use 1 packet of Oreo Cookies.  A little over half for the base and then the rest for the inside.

A quick way to make chocolate curls is to use a bar of chocolate and take a knife, scrapping across the back of the chocolate.  Be careful not to cut yourself. I use European chocolate or Ghirardelli.

Happy Valentine's Day, Which Marks One year Blogging

Happy Valentine's Day to you.  I hope you were blessed and showered with love!  


I can not believe I have been blogging for one year today!!  The time has gone by so quickly and throughout the last year many times I've forgotten to post.  In a way I am glad as I know I was busy with my children, which is what is more important.  I would always be envious of those who could put out Valentine cookies in January.  For me I'm still doing January work, which is filled with Pastor's Conferences and my son's birthday, to think of the next holiday and while I so what to be ahead of the game I am not!

So here are my last minute cookies, which I made last night!!  Yes I had a plan which seemed to go out the window when I realized it was Teacher Appreciation Week and I was scheduled to make a Oreo Cheesecake, Tiramisu and 40 personalized Cookies!  


Sweetheart Cookies
I made red heart cookies for my daughter's school friends and for my son's I decided upon making Sweetheart Candy Cookies.  They were very simple to make and very effective.  The kids loved them!


I asked my husband to make the labels that looked like the box of Sweetheart Candy and this is what he came up with.  Brilliant!



For my children's teachers I ended up making Love Letters and Stamp cookies and putting them in a little tin mailbox that I got from Target for $1.  I wished it was my idea, but it wasn't I got it from www.sweetsugarbelle.com and the wax seal I got from www.ohsugareventplanning.blogspot.com Both ladies are incredible cookie artist and have great ideas to share.  I am so pleased that everyone loved their cookies and it really was worth staying up making them for my little ones.  They loved it.  We had a great day showing how much we love our family, oh if only we would be appreciative of each other every day and not just every so often. May this be my goal! :)

Valentine Love Cookies Could be Yours!


Valentine's Day is approaching and I got thinking, if only everyone could see and experience love the way I do and my children do.  I think a lot of people, although we have our ups and downs know what it is to love and be loved, but for some out there they do not know.  They have not experienced what it is to be loved unconditionally.  My children make mistakes and sometimes, more than often, purposely choose to do wrong, but oh how I love them.  How I love their laughter and fun they bring into my home and yes I will even take their shouts and cries because I love them and as time goes by those difficult days soon get forgotten and only the precious moments are remembered.  As my children grow my prayer is that I would be the example God wants me to be for them, that even my mistakes as a mother would be used in their lives (and believe me I make many) to help them grow to be great men and women of God.

There are many children who don't experience a mother's love, a father's guiding hand, a playful sibling or a place they can call home and this Valentine's day my heart goes out to them, especially as I look into the sweet faces of my children. So I thought I would do what I only know to do and that's bake!

Treasures From The Word

Back in January my church hosted their annual Pastor's Conference and I had the opportunity to make some cookies to go along with the theme, "Treasures from the Word".  It is a huge event, about 900 adults attend and 200 children!  I am thankful that I didn't have to make that many cookies otherwise I might still be at it.




This coming week is going to be a busy one with Teacher Appreciation Week and of course Valentines! Watch out for more cookies
