Little Mermaid Cake

This cake was fun and challenging at the same time. The birthday girl loves Ariel, but since she was turning 18 we decided to have Ariel look like the birthday girl. It probably took me about 3-4 days to make her and I made her from a mix of fondant with tylose powder which stiffens up the paste to enable it to be sculptured. Using gumpaste is great for sugar flowers but when modelling figures it tends to dry out quickly and crack.

The actual cake was confetti cake with rainbow buttercream! I certainly would have liked to have seen this cake cut just to see all the fun colours in it. It feeds about 35 people so I also made about 40 Chocolate Truffle Cupcakes with Chocolate Ganache filling and Cream Cheese frosting. To keep them in the "Under the Sea" theme I made seashells using the fondant mix and placed them on top of the cupcakes!
